- ½ a cup of olive oil
- 2 egg yolks
- 3 teaspoons of lemon juice
- 1 teaspoon of mustard (optional)

Your first step is to blend the two egg yolks. You can do this by hand with a whisk or use a blender for easier mixing. If using mustard, add it into the egg yolks and blend a bit more.
Once this is sufficiently blended, then add the 1 teaspoon of the lemon juice. With your blender on low speed, mix these ingredients together completely.
After it is completely mixed, start adding the ½ cup of olive very slowly. It is important to drip the oil in slowly, because you are creating an emulsion.

When the final oil is incorporated and the mayonnaise is thickened to your liking, then you can add the remaining 2 teaspoons of lemon juice.
